Mushroom Malai Curry

Malai is rich, deliciously creamy, not too spicy gravy, basically milk or thick cream in which veggies like mushrooms, methi (fenugreek) leaves, peas etc are cooked.

Ingredients :

Button Mushrooms - 1/2 lb

Onion - 1 large

Tomatoes - 1 large OR Tomato paste - 1/2 a tin

Ginger - 1/2 inch (grated)

Garlic - 2 pods (cut finely)

Turmeric powder - 1/2 tsp

Red chilli powder - 1/2 tsp

Dhaniya powder - 1 tsp

Jeera powder - 1/2 tsp

Amchur powder - 1/2 tsp

Whole Milk - 1 cup OR Heavy cream - 3 tbsp

Fresh coriander - to garnish

Preparation :

1. Chop the onions and tomatoes, cut the button mushrooms in halves.

2. Take 2 tbsp of oil in a pan and heat. Add garlic to the oil, next add onions and ginger to it. Fry till onions turn a light brown, next add tomatoes.

3. Fry for a while till tomatoes are slightly cooked. Add the powders to it. Fry again till they all get mixed well. Add the mushrooms to it.

4. Cover and cook a while till mushrooms are half done. Add milk or cream to the mushrooms and cook for a little while longer till the mushrooms absorb the milk. Take the pan off the fire. Garnish with chopped coriander.

Serve with hot Phulkas or Rotis or Rice
