Fried Pappadoms and Vegetable Curry (Mulaku Kakshyam)

Ingredients:

Banana pieces 

- 11/2 cups

Lady's finger pieces

- 1 cup

Brinjal pieces

- 1 cup

Potato pieces

- 11/2 cups

Dry chillies

- 8

Pepper corn

- 1 tsp

Turmeric

- 1 piece

Green chillies

- 6

Pappadoms

- 6

Grated coconut

- 3 cups

Coconut oil

- 2 ozs
Curry leaves - 3 stalks

Method:

Grind dry chillies, pepper and turmeric and mix it in 2 cups of water. Add the slit chillies and vegetables and cook, adding very little salt. (Pappadoms may have too much salt sometimes).

Pour one cup water and take out the milk from the coconut. When the vegetables are cooked, strain the coconut milk into it. Put the curry aside.

Cut the pappadoms into small pieces, fry it in oil, add the crushed curry leaves and mix it along with the oil in the curry.

Add enough salt after adding the pappadoms.
