Method of Preparation :
Wash and soak black urad dal and rajma overnight in 2 to 3 cups of water.
Cook the soaked urud dal, rajma and gram dal in 2 cups of water with salt and 1/2 tsp of red chilli powder. Mash the cooked dal well with a thick spoon. Add 1/2 cup fresh cream and 1/2 cup of curd,let it simmer and boil, then switch off the stove, and keep it aside.
In a thick bottom pan heat oil, and butter or ghee. Season with whole cumin seeds. Add chopped onions, add chopped green chilly (1 in no.), and sauté until golden. When it is done, add chopped ginger, garlic, whole red chilly (2 in no.) and tomatoes. Add 1/2 tsp of turmeric powder, jeera powder, and the remaining chilly powder. Sauté till tomatoes are well mashed and oil separates. Add boiled and mashed dal and rajma and mix well.
Let dal makhani simmer for 15 minutes. Serve hot with naan or paratha.
