Method of Preparation :
Egg Cubes : Beat the eggs till light and fluffy. Add the remaining ingredients. Grease a pan. Pour in the eggs and steam in a pressure cooker or rice cooker till set.. Allow to cool and cut in squares and keep aside.
For Gravy : Heat oil in a pan and fry potato cubes till light brown. Take them out and keep aside. Season bay leaves and cumin seeds in the same oil. Add sugar and let it caramelise. Add onion paste and cook for 3-5 minutes. Add cumin powder, ginger-garlic paste, turmeric, chilli powder and tomatoes.
Sauté well over a medium flame till the oil separates. Add potatoes, peas and salt. Sauté for a while and pour 3cups of water. Cover with a lid and allow to boil. When the potatoes are almost done, add egg cubes. Cook for 5 minutes. Sprinkle garam masala and remove. Serve with rice.
