Egg Stew

Stew or Ishtu is a preferred accompaniment for Appam, a traditional breakfast item in Kerala. Appam-Stew combination is generally served as one of the courses in feasts. The Ishtu goes well with plain bread as well. There is Vegetarian as well as non-Vegetarian versions of Ishtu, let me Prepare Egg Ishtu.

Ingredients :

Onions - 1
Ginger -  
Garlic -  
Green Chillies -  
Coriander powder -  
Garam Masala - 1-2
Salt - to taste
Vinegar - 1-2 tsp
Eggs hard-boiled - 2-3
Coconut milk (First Extract) - 1 glass
Coconut milk (Second Extract) - 1 glass
Pepper powder - 1-2 tsp

Cooking Method :

Heat 1-2 teaspoon of oil in a pan. Add thinly sliced onions into it and continue to sauté until the onions turn tender. Lets add ginger; garlic and green chillies into it followed by the spices such as coriander powder, garam masala and salt and continue sautéing. To this lets add second extract of coconut milk and vinegar and let it boil.

Add sliced hard-boiled eggs into the Ishtu. Then add the first extract of coconut milk along with a spoon full of pepper powder and mix well. Let the curry simmer for a few seconds..

Finally add a little coconut oil as it gives a good aroma to our Ishtu.

Your yummy Egg Ishtu is ready to serve.
