Battura Recipe

Battura is a fluffy, deep-fried, leavened bread served commonly as a breakfast dish in northern and eastern India.

Traditionally paired with chickpea curry, Chana battura / Chole Bhature has its origin in Uttar Pradesh.

Ingredients :

Refined flour or Maida - 1 1/2 cup
Wheat flour - 1/2 cup
Youghurt - 2 tbs
Baking Powder - 1/4 tsp
Sugar (Optional) - 1 tsp
Warm Milk - to knead the dough
Salt - to taste

Method of preparation:

Mix the flour in a pan, saute it for 2 min on low fire. Keep it in a wide open plate and when it is cooled, add the Yoghurt, sugar, salt, baking powder. Now knead it with the warm milk. Cover the dough with a wet cotton cloth and keep it aside for 2 hrs.

Divide this mix into small portions, roll it into thick rounds. Heat oil in a deep pan. Deep fry the battura's in hot oil until it pops up. Turn it up side down. Now drain it in a colander, and before the Battura gets cold, prickle it with needle so that the air goes out. Serve hot with Chana curry.
