Kosumbari is a salad made of the broken halves of the soaked green moong dal (lentil) minus its skin, spiced with salt, green chilli and mustard seed and mixed with tiny scrapings of coconut, (cucumber and carrot optional )and dressed with a little lime juice.

Method of Preparation :

Soak green gram dal in water for one hour. Drain water and add grated coconut, green chillies and coriander leaves. Sprinkle salt and lemon juice and mix well.

Heat oil and add the seasoning ingredients. Pour it over the prepared kosambari.

Note : It can be also made using Chana dal (bengal gram dal). For cucumber kosambari , instead of dals, use finely cut cucumber and follow the same method.
