Curd Shorba

Curd Shorba,conjured up this magical soup using low-fat curds, tomatoes, cucumber and onions

Ingredients :

Low fat curd - 1 cup
Turmeric Powder - 1/2 tsp
Besan (Bengal gram flour) - 4 tsp
Cumin Seeds - 1 tsp
Chopped green chillies - 2 tsp
Grated ginger - 1/2 tsp
Big onion - 2 nos
Milk - 1/4 cup
Cucumber(sliced) - 1 cup
Chopped tomatoes - 1/2 cup
Chopped coriander - to garnish

 Cooking Method :

Combine the curd, turmeric powder and besan in a deep bowl and mix well till no lumps remain. Keep aside.

Heat oil in a deep non stick pan and add cumin seeds. When the seeds crackle, add green chillies and ginger and saute on a medium flame for few seconds. Add onions and saute on a medium flame for one minute.

Add curd besan mixture followed by milk and 1/2 cup of water. Mix well and cook on a slow flame for 2 to 3 mintues. Keep stirring occassionaly.

Add cucumber, tomatoes, salt and pepper powder, mix well and cook on slow flame for another minute, while stirring occassionaly.

Garnish the soup with a sprig of coriander and serve hot.
