Capsicum Soup

This simple but delectable soup is packed with goodness of folic acid and vitamin a from capsicum and tomatoes

Ingredients :

Garlic - 2 cloves
Onion - 1
Tomato - 1
Cilantro - handful
Parsley Sprig - 1 Cup
Capscicum - 1
Green chillies - 2
Veg Stock - 2 Cups
Ground Pepper - As needed
Roasted Cumin Powder - 1/2 tsp
Corn flour - 3 tsp
Salt -

to taste

 Cooking Method :

Heat oil in a pan, saute the garlic and onion for a minute. Add tomato, parsley sprig, Cilantro, green chilies, and Capsicum into it. Cook till capsicum becomes soft. Puree the mixture using a hand blender or mixie. Strain the pureed mixture to remove the seeds and skin. Now add vegetable stock to this strained soup.

Now pour the soup in to a pan, add cumin powder and pepper powder and required and bring the soup to a boil. Mix corn flour with water and add it into soup while boiling. it will thicken the soup

Add some sliced capsicum. tomatoes and parsley into it and let it simmer for another 5-10 minutes.
Switch off the stove , transfer to bowl and serve hot.
