Brazilian Chicken Coxinha

A starter Recipe from Brazil by Chef Libert of Renai Cochin.

Similar to cutlets / koftas, Coxinha is a popular street food made of dough filled with shredded chicken and deep fried in oil.

Ingredients :

Chicken Keema - 1/2 kg
Celery - 1 tbsp
Onion (chopped) - 4 tsp
Garlic - 2tsp
Pepper crushed - 2 tsp
Rosemary - 1tsp
Potato boiled & mashed  - 2-3 no
Bread crumbs - 1 cup
Egg - 2
Maida - 1 cup
Oil (sunflower) - for frying

Cooking Method :

Coxinha is a Brazilian starter recipe. Minced chicken is cooked with condiments, mixed with mashed potato and dipped in egg flour batter, made into pear shapes and fried in oil.

Make a batter with beaten egg and maida in a powdery consistency. Now we will sauté chicken keema in olive oil. Heat olive oil and add chopped garlic. When it becomes light brown, lower the fire and add celery. Add finely chopped onion and salt to the pan. Add the minced chicken keema and sauté for 10 minutes and once it is almost done add crushed pepper and Rosemary and let it cook for some more time. Remove from the stove and let it cool down for 10-15 minutes. 

Later knead the cooked keema with mashed potato along with fine bread crumbs and lets make pear shapes or koftas out of it. Dip the Kofta shaped rolls in egg-maida mixture and deep fry in hot oil. Your Coxinha's are ready to serve. Serve hot with tartar sauce.
