Brinjal Bajji or Eggplant Bhaji

Bajji is a very common snack in India. It is made with chilly, plantain, egg, potato, onions etc. Brinjal too can be used to make Bajji. Shall we try it out..?
Ingredients
Brinjal (Sliced) - 2 no
Gram flour - 2 cups
Asafoetida powder - ¾ tsp
Red chilly powder - 1 tbsp
Salt - to taste
Water - enough to make a thick batter
Oil - for deep frying

Cooking Method

Slice the brinjal with the skin after removing the top end...

Cut into round slices...

Now take a bowl, put gram flour, red chilly powder, asafoetida powder, required amount of salt and water into it.

Mix well to form a thick batter...

Put the pan on the stove.. Pour oil in to the pan and heat it...

Dip the slices of brinjal in the batter and put them in hot oil.

Fry till it turns light brown in colour...

Take the fried slices out of the pan.. Serve hot with chutney....
