Method of Preparation :
First in a pan fry asafoetida, fenugreek, coriander powder and cumin powder without using oil. Fry, till the mixture turns brown. Then grind the contents in a mixer. Keep this masala powder aside.
Now heat gingelly oil in a pan, add mustard seeds. When the mustard seeds splutter, add garlic and sauté for sometime. When the garlic gets half cooked, add limejuice to the pan followed by turmeric powder, chilly powder, masala powder, salt and mix well. Add curry leaves so that its gets a special flavor. When the garlic is done, remove from heat after say about 10 minutes. Allow it to cool and here our Garlic pickle is ready.
