Method of Preparation:
Pour some oil in a pan- when it gets heated add the chopped shallots and sauté well till it turns brown. Now add the remaining ingredients such as sliced ginger, green chillies, turmeric powder, curry leaves, garam masala and some salt and mix well.
Add required amount of water for the gravy. Put in the sliced brinjal pieces and stir with a ladle so that the ingredients combine well. To finish it off, pour a bit of oil on top of the curry. Close the lid and cook for about 10 minutes. Serve hot with rice or roti.
