Mix ginger garlic paste and spices together and rub into meat or chicken. Leave to marinate for half an hour. Lightly fry potatoes and keep aside.
Heat 2-3 tbsp ghee or oil in a pan and fry meat or chicken till light brown. Do not over brown. Add green chilies, salt and a little water to pan, cover with an inverted lid, pour water on a lid and let it cook till meat or chicken is half done, adding a little water to pan as and when required.
Add potatoes and simmer till meat and potatoes are cooked and gravy is thick.
Note: In order to save time or short of time you can make use of pressure cooker. If chicken three whistles and cooker close. If lamb add little more water, three whistle, fire slow and keep ten minutes more to become more tender.
