Baingan/Brinjal Pakora

Pakora or Pakoda's are crispy and delicious..

Most of the veggies can be coated with flour and spices, and deep fried in oil. Watch Pictures and Video on how Brinjal Pakora's are made.

Ingredients :

Brinjal - 5 to 6
Gram flour - 1cup
Turmeric Powder - ¼ tsp
Coriander powder - ½tsp
Pepper powder -½tsp
Baking Soda - a pinch
Salt - as required
Cumin powder - ½ tsp
Asafoetida - 1 pinch

Preparation :

In a mixing bowl take the ingredients - 1 cup gram flour, ¼ tsp turmeric powder, ½ tsp pepper powder and a generous pinch of asafoetida, salt along with required water and whisk to a smooth batter without lumps.

Dip the thinly sliced brinjal in the batter evenly and gently place them in medium hot oil for frying.

Turn over when one side is cooked partly and after a minute or so, flip again and fry the baingan pakodas till crisp and evenly golden.

Now, with a slotted spoon take the pakoras and drain as much oil as possible.

Serve the Baingan Pakoras hot or warm with coriander chutney or tamarind chutney or tomato ketchup.
