Cauliflower Coconut Curry

Cauliflower Coconut curry is a simple curry which goes well with Chapathi, Rice and even Dosa.

Ingredients :

Oil - 2-3 tbsp
Ginger Garlic paste - 1-2 tsp
Curry leaves - 10 nos
Green Chilies - 3-4 nos
Onions - 1
Red chilly powder - 1 tsp
Coriander powder - 1-2 tsp
Turmeric powder - 1 tsp
Grated coconut - ¼ cup
Tomato - 1
Cauliflower florets - ½ cup
Vegetable masala - 1-2 tbsp
Water - as required
Salt - to taste

Cooking Method :

Heat a pan under medium flame. Add 3-4 tbsp of cooking oil, add ginger garlic paste to it along with curry leaves and chopped green chillies, sauté well. Now add thinly chopped onions continue sautéing until it turns tender. You may now add spices such as Red chilly powder, Coriander powder, and turmeric powder and stir fry for a minute or two, to this add grated coconut and stir fry until a sweet aroma emanates the kitchen. Now in order to give a tinge of sweetness to our curry lets add chopped tomato into the recipe. Once the oil separates, bring in the half cooked cauliflower florets into the pan and mix well.

You may now add just enough water for a thick gravy, and salt to taste. Finally add 2-3 tsp of vegetable masala powder into the curry and mix well. Close the lid and continue to cook for about 2 more minutes and finally our coconut cauliflower curry is ready to serve.

Cauliflower Coconut curry is a perfect side dish, which can be had for Break fast, Lunch or Dinner.
