Omelette is a dish made from beaten eggs cooked with Oil or butter. Let me prepair a variation of Omelette also known as Omelette Fusion made with mashed potatoes in combination with several condiments.

Ingredients :

Coconut Oil - 2-3 tbsp
Ginger - 2-3 tsp
Garlic - 2-3 tsp
Green chilies - 1 tsp
Pepper powder - 1-2 tsp
Turmeric powder - ¼ tsp
Salt - as required
Boiled potato - 1
Eggs - 2
Coconut milk - 5-6 tsp

Cooking Method :

Pour 2 tbsp of Oil in a shallow pan and warm it on medium heat. Add chopped ginger, garlic along with shallots and green chilies to the pan. Sauté the veggies; let it cook for some time. You may now add spices such as pepper powder, turmeric powder and salt and continue sautéing. To season the recipe lets add 5-6 tbsp of coconut milk. Now lets bring in our special egg mixture made by blending raw eggs with mashed potatoes. We'll spread this mixture over the formerly cooked condiment to form a thick crust. Using a flat spoon let us spread the beaten egg mixture equally all over the shallow pan.

Pour Oil at the edges to avoid Omelette from getting burned. Close the lid and let the Omelette cook for 2 minutes on low heat until it is set all the way through. Instead you may turn over and cook the other side as well. Your Omelette fusion is ready to serve.

Omelette fusion can be eaten hot or cold and is delicious straight from the fridge and served with salad.
