Malabar Chicken Curry

Ingredients :

For the Curry:    
Oil - 2 cups
Cinnamon - 3 tbsp
Cloves - 3 tbsp
Cardamon - 3 tbsp
Chopped Ginger - ½ cup
Garlic - ½ cup
Onions - 5-6 cups
Green Chillies - 1-2 cups
Turmeric Powder - 4 tbsp
Garam masala - 5-6 tbsp
Chicken masala - 5-6 tbsp
Pepper powder - 3-4 tbsp
Coriander Powder - 4-5 tbsp
Thin Coconut milk - 4 cups
Thick Coconut milk - 2-3 cups
Salt - 5-6 tbsp
Chicken pieces - ½ kg
Cashewnut paste - ½ cup
For the Gargish :
Oil - 1 tbsp
Shallots - 10-12 chopped
Curry leaves - hand ful

Cooking Method :

Heat oil in a pan on medium heat. Once hot, add in the spices such as Cinnamon, Cloves, Cardamon along with chopped ginger, garlic, onions and green chillies and mix all the ingredients. Sprinkle a little salt to speed up to cooking procedure.

Now lets add the masalas such as Turmeric Powder, Garam masala, Chicken masala, Pepper powder, Coriander Powder and continue to mix well until the masalas and the veggies blend perfectly.

Add the Chicken pieces along with Chopped tomatoes into the recipe. Continue to mix up all the Ingredients.

Now lets add Thin Coconut milk into the recipe along with some salt. Let the curry cook for sometime.

You may now add Cashewnut paste to enhance the flavour of the recipe. When chicken is fully cooked, add thick coconut milk and allow it to simmer for a few mins.

Our Malabar Chicken Curry is almost ready, meanwhile lets prepare the seasoning

Heat oil in a small skillet. Once hot, add in Chopped Shallots and allow them to turn a little brown in color. To this add a few Curry leaves and continue sauteing.

Lets pour the seasoning over the already cooked Malabar Chicken Curry and your yummy Recipe is ready to serve.

Malabar Chicken Curry goes well with rice, chappati or appams.
