Cooking Method :
Lets begin by cooking the Potatoes. Place a large saucepan at medium flame add 2-3 cups of water, a tsp of turmeric powder and salt. Now add Cubed potatoes into the boiling water, let it gently simmer. Once the potatoes are cooked we can keep it aside to cool down.
Meanwhile heat oil in a large pan under medium flame. Add Cumin seeds, chopped green chilly, curry leaves and fenugreek seeds sauté for some time until a nice aroma emanates the kitchen. Now mix the formerly cooked Potatoes into the masala, with a pinch of salt mix well and finally add ground cashew nut into the Curry. Your Potato cashew nut curry is ready to serve.
