Cooking Method :
First we'll make the vegetable stock. Pour some water into a shallow vessel; keep the flame at medium mode. Add sliced apple, Onion, Beetroot, Carrots, Cucumber or any other vegetable into the vessel and let it boil. When they turn tender, reduce heat and simmer for 10 minutes. Drain water from the vessel using a colander. Mash the vegetables using the back of a spoon, and keep the stock aside.
Meanwhile you can cook the ingredients of Winter Minestrone in another Pan. Pour oil into the pan, keep the flame at medium mode. Add chopped onions along with garlic flakes and sauté till it turns tender. Add chopped Spring onions and carrots. Continue sautéing for 2 minutes. Now you can add chopped tomato and Kidney beans into the pan along with the formerly made vegetable stock and a tsp of salt. Let your Winter Minestrone cook for 15-20 minutes. Finally add chopped chunky slice apple into the Recipe.
