Ingredients:

 

 

Potatoes

Papadi beans

Asafetida

Oil      - 5-6 tablespoons 
Soda bi-carbonate  - 1/4 teaspoon 
Sweet potatoes      - 2 nos. 
Salt - to taste
Lemon    - 1no
For Dumplings :    
Oil    - 1 tbsp
Methi (Fenugreek)  leaves finely chopped     - 100 gms.
Red chilli powder    - 1 tsp
Fresh ground coconut   - 1 tbs
Gram flour (besan)   - 1/2 cup
Salt - to taste
Asafetida - a pinch
Turmeric Powder - 1/4 tsp

Oondhya is a delicious vegetable brew made using potato, brinjal, yam, sweet potato, green beans and many other vegetables. Traditionally made in an earthenware pot buried in the ground with a fire lit above, the flavour is enhanced with oil and green chilly chutney.

Method of Preparation: 

For dumplings: Mix all ingredients for dumplings, make a smooth, stiff dough. Form into small oval, dumplings. Deep fry in hot oil till evenly brown. Keep aside. 

Slice the potato, sweet potatoes, brinjals, yam and  into big pieces. Cut raw bananas into three pieces and slit each piece vertically. Grind to a paste green chilli, ginger, garlic. Mix together coriander leaves, salt, turmeric powder, coriander powder, red chili powder, grated coconut and the ground paste. Rub the vegetables with oil and masala paste. Marinate for 30minutes.Heat oil in a deep-bottomed pan, add asafetida, and the marinated vegetables. Mix the soda with ¼ cup water and add into the vegetables. Cover and cook on low heat till the vegetables are almost done. Then add the dumplings. Add lemon and sprinkle some water if required. Add sugar, stir. Serve hot, either as is, or with parathas.
