Cooking Method :
Add in coconut oil into a heavy bottom pan to this add Ginger garlic paste and saute well. Now add thinly sliced onions and green chillies into it, saute and fry for sometime. To this add in the spices such as turmeric powder, coriander powder and saute well.
Lets add duck pieces into the pan along with garam masala and mix well for sometime. Add pepper powder followed by some oil to blend the masala. Transfer the half cooked duck pieces and pressure cook along with water for around 15 minutes. To season, heat coconut oil along with coconut pieces and shallots, curry leaves and tomatoes one after the other. Add red chilly powder and keep sauteeing. Pour in the formerly made pressure cooked duck pieces into the heavy bottom pan. Let the duck pieces boil along with coconut milk and pepper power for rich taste and aroma. Duck roast is ready to serve.
