Eggs and potatoes get along with any dish be it Veg or Non-Veg. Lets mix both these key ingredients to make a Veg combo Breakfast recipe Aloo Burji.

Ingredients :

   
Oil - 1-2 tbsp
Onions - 2 cups
Potato thinly chopped - 1-2
Green chilly chopped - 4-5
Turmeric Powder - 1tsp
Egg - 3
Pepper Powder - 1-2tsp
Salt   1 tsp

Cooking Method :

To begin with, pour 1-2 tbsp of oil into a saucepan under medium flame. When the oil is hot enough you may add 2 cups of chopped onions into the pan sauté for sometime until they turn golden brown. Now add chopped cube sized potatoes into the pan continue sautéing until the Potatoes gets cooked.

Further add spices into your recipe.. turmeric powder, chopped green chilies and mix well. Add the eggs one by one by breaking them directly into the pan. Do not raise the heat. The Egg is getting scrambled and absorbing the flavor. Finally to give a finishing touch add condiments such as salt and pepper into your Aloo Burji .You spicy Aloo Burji is ready to serve. This recipe can be had for breakfasts and is also a great snack for kids when they come home from school…
