Khagina is a Hyderabadi breakfast recipe mainly comprising of Onions, eggs and spices. It is usually prepared with less onion and more eggs to give it a great flavor. This Hyderabadi breakfast recipe is generally accompanied by juice of Falsa (a berry) or Hapshola (Raw Mango cooked and pulped).

Ingredients :

Oil - 2 tsp
Onions Chopped - 2 no
Garlic Chopped - 2 tsp
Ginger Chopped - 2 tsp
Turmeric powder - ½ tsp
Red chilly powder - 2 tsp
Salt - to taste
Eggs - 3
Coriander leaves finely chopped - 3-4 tsp

Cooking Method :

To prepare Khagina, lets heat a large non-stick saucepan on medium heat. Pour oil and add chopped onions and sauté until it turns slightly brown. To this, lets add 2 tsp of chopped garlic and ginger, and fry for around 2 minutes. Now add the condiments such as Turmeric powder, Red chilly powder and salt. Sauté well, once the condiments gets mixed up properly, let's break 2 raw eggs over it. You may add beaten eggs if you want your Kagina to be thick. Now lets sprinkle coriander leaves over the khagina. Using a spatula break the Khagina into small bit size pieces and fry the other side as well. Breakfast recipe Khagina is ready to serve.

As a variation, you could add ¼ cup milk, and green chillies.
