Butter Capsicum Rice

Ingredients :

Butter - 50 gms (2 large chunks)
Cloves - 4
Cardamom - 4
Cinnamon - 1 inch piece
Basmati rice - 2 cups
Salt - to taste
Pepper powder - 2 tbsp
Capsicum (diced) - 1cup

Cooking Method :

In a heavy bottomed pan, melt butter, add cloves, cardamom and cinnamon to it. Add washed and drained basmati rice to it. Fry the rice for 7-10 minutes till it becomes lightly crispy. 

Meanwhile boil 3 cups of water in a saucepan. Once the rice turn crispy, add the boiling water to the rice. When it starts to boil, keep in simmer and cook the rice covered with a lid. When the rice is almost cooked, add capsicum, pepper powder and salt to taste. Cook it covered for another 5 minutes and then open the lid and mix well. Serve hot with raita and pickle.
