Cooking Method :
Steam the raw mangoes on low heat until the green colour of the skin fades. Carefully peel off the cooked skin of the mangoes.
Remove the pulp using a spoon. Grind clove, cinnamon, star anise, ginger and pepper, add this to the mango pulp along with two spoons of sugar. Pour a little bit of water and mix it well.
Heat a pan. Put the mix to the pan and stir continuously until the water content disappears. Once it becomes a thick paste, remove the pan from heat. Raw Mango Squash is ready. Once cool, transfer this paste to a dry container. You can store it the refrigerator for a long time.
You can make tasty raw mango juice by adding one spoon of this paste to water as per the need. One spoon of the mix can make two glasses of juice. Add sugar according to taste.
