Duck Mappas

Mappas is a dish from the southern state of Kerala in India where the main ingredient is cooked with coconut milk, coriander powder and other spices, sans chilly powder. Kuttimulla, a restaurant specialising in local traditional cuisine provides the recipe for their special Duck (tharavu)mappas along with video demonstration.

Ingredients :

Chopped duck - 3
Turmeric powder - 1 ½ tsp
Coriander Power - 6 tsp
Garam Masala - 2 tsp
Pepper powder - 2 tsp
Coriander leaves - 5 or 6 tsp
Curry laves -  
Green chilly - ½ cup
Chopped Onion - 1 cup
Chopped Garlic - ¼ cup
Ginger - a small piece
Salt - To taste
Coconut milk - 250 ml or milk of two full coconuts
Coconut oil - 2 cups

Cooking Method :

Cook the duck with salt, 2 pinches of turmeric powder, one or two green chillies and sliced onion. Once it cooked well,take it out of the stove and keep aside.

Heat some oil in a pan Add chopped onion, garlic, ginger and green chilly to it Sauté well until it turns to golden brown

Now add 1 ½ tsp of turmeric powder and 5 or 6 tsp of coriander powder to it, and mix well.

Add boiled duck to it. Add two tsp pepper powder, 2 tsp garam masala to this mixture, stir well. Pour coconut milk to this.

Once it starts to boil, add chopped coriander leaves and curry leaves to the curry. If you want you can add a little more salt. The Tharavu Mappas is ready!
