Vegetable chow mein

Ingredients :
Chinese Noodles : 500 gram
Onions Chopped : 2 nos
Capsicum Diced : 1 cup
Soy Sauce : 2 tsp
Chilli Sauce : 2 tsp
Garlic Paste : 2tsp
Celery : 1 cup
Green Chillies Chopped : 2 tsp
Cabbage : 1 cup
Carrot : 1 cup
Vinegar : 1 tsp
Salt : as required
Ghee : for sautéing

Method of Preparation :

To begin with, boil some water in a pan and add noodles. Close the lid and allow it to boil for sometime - remember to add a bit of salt to enhance the flavor of the noodles. Now light the adjacent burner and place a pan on it. When the pan gets heated up, add some ghee for sautéing out the veggies. Fry garlic paste in the ghee, add the onions and sauté till they turn into a light pink shade.

Meanwhile check whether the noodles are cooked. If the noodles have become soft and edible, rinse it in running water, strain, and toss in some oil so as to avoid the noodles from sticking together.

Here our onions are almost done, now add capsicum, carrot, cabbage and a little amount of salt and sauté them on high heat. When they are done, add soy sauce, chilli sauce and some vinegar for a tangy taste.

Transfer the boiled noodles to the mixture and combine well. Serve hot. You can enjoy the dish as a vegetarian main course, or as an accompaniment to meat or fish dishes.
