Bitter melon stir fry(pavakka mezhukupuratti)

Ingredients :

Finely chopped bitter melon - 2 nos
Green chillies chopped - 3 nos
Chopped onions - 2 nos
Chili powder -  
Turmeric powder -  
Lemon juice -  
Salt -  
Oil -  
For seasoning:
Mustard seeds -  
Sesame seeds -  
Fenugreek -  
Dried red chilies - 3 nos

Method of Preparation:

Moving to its preparation, first add some amount of salt, say about 2 spoons into the finely chopped bitter melon, this is to decrease the bitterness of the melon. Mix well with your hands, but make sure they are clean. Keep this mixture aside for about an hour. Squeeze out water gently by pressing the bitter melon and keep it aside.

Heat oil in a pan and fry some mustard, sesame and fenugreek seeds. When they splutter add the dried red chilies and curry leaves. Fry for a minute, then add the finely chopped onions, green chilies and sauté well. When the onions turn golden brown add the bitter melon and mix well. You can add ingredients such as turmeric and red chilly powder if you want your dish to be spicier. Finally add a tablespoon of lemon juice to the dish to give it a tangy taste. Close the lid and let it cook for about 10 mins on medium fire. Now open and feel the flavor. We are done with our bitter gourd stir fry…serve hot and enjoy.
