Heat ghee in a pan, add semolina and cook stirring continuously till it turns golden brown.
Now add chopped pineapple and further cook for 2 to 3 minutes.
Add two cups of water, mix, close the lid and cook on medium heat for 3 - 4 minutes.
Open the lid, add sugar and mix well. Keep stirring till all the moisture evaporates and semolina is cooked completely.
Meanwhile heat some ghee in a small pan and roast the cashewnuts in it and mix it with the semolina pineapple mixture.
Our pineapple sheera is ready, transfer it to a serving platter. Sprinkle a little sugar & cashewnuts on top (optional) and serve hot
