Chicken Veluthulli Kachiyathu

Ingredients :

   
Smashed garlic - 2-3 tsp
Finely chopped onion - 1cup
Kashmiri chilli powder - 1 to 2 tsp
Turmeric powder - 1 or 2 pinches
Masala powder - 1 tsp
Salt - to taste
Pepper powder - 3 tsp
Garam Masala powder - 1 tsp
Oil - to fry
Coconut Oil - 2-3 tbsp for the curry
Coriander leaves - 1 or 2 tsp
Chopped green chilli - 3 or 4
 For Frying    
Garlic - 2-3 cups 
Curry leaves - 2 cups
For masala paste we need,
Garlic - 5 cloves
Ginger - a small piece
Pepper powder - 2tsp
Vinegar - 4tsp

Cooking Method :

In a blender combine garlic, ginger, pepper powder and vinegar and blend to form a smooth masala paste.

Clean chicken and cut into small / medium pieces. Add a little pepper powder and salt to the chopped chicken. Add masala paste. Add 2tsp chilly powder and a pinch of turmeric powder to the chicken and mix well.

Heat oil in a pan. Add chicken pieces to the hot oil and deep fry until chicken pieces turn golden brown. Keep it aside.

Fry 2-3 cups of garlic in the same oil. Again fry curry leaves. Take it out of the oil and mix with fried garlic. Keep it aside.

Heat some coconut oil in the pan. Add some smashed garlic, chopped green chilly, chopped onion and 2-3 spoons of salt as per taste and stir well. Once the onion is half cooked, add a little bit of turmeric powder, 1tsp Kashmeeri chilly powder, 1tsp masala powder, a little bit of garam masala powder, 3 tsp pepper powder to it. Lower the flame and sprinkle some water. Keep sauteing in between. when the masala is done, add the fried chicken pieces to the pan. Mix well for 2-3 minutes. Add fried curry leaves and garlic to it. Mix well and serve hot..
