Semiya or Vermicelli Upma

Ingredients:    
Ghee - 3-4 tbsp
Oil - 3-4 tbsp
Vermicelli - 2 cups
Mustard seeds - 2-3 tsp
Toor daal - 2-3 tsp
Curry leaves - 12-15
Thinly sliced onion - 1 no
Chopped Tomato - 1
Chopped Beans - 2-3
Chopped Carrot - 1
Green chilly - 1-2 no
Coriander leaves - 2-3 sprigs
Turmeric powder - 2-3 tsp

Method:

To begin with, place the pan on the stove; keep the flame in medium mode. Pour 3-4 tbsp of ghee in the pan, wait until the ghee gets hot. Add Vermicelli and sauté till it turns golden brown. Empty the roasted vermicelli to a bowl.

Again pour 2-3 tbsp of oil into the pan. Add the roasted vermicelli into the pan and a cup of water and let the vermicelli cook for some time. Pour the semi-cooked vermicelli into a colander to drain the water. Keep it aside.

Place the pan once again on the stove, pour in some oil. Add Mustard seeds and let them splutter. To this add Toor daal and curry leaves sauté them till the daal turn slightly brown and a nice aroma emanates the kitchen. Now add the thinly sliced onions into the pan, mix in rest of the chopped vegetables along with Turmeric powder.

After the veggies get cooked, add vermicelli and leave it for sometime for the final cook. Add salt to taste and 2-3 sprigs of coriander leaves for flavor. And your delicious Semiya upma is ready.
