Vegetable Rice

Ingredients :
Basmati Rice - 1/2 kg
Ghee - 50g / 2tsp
Chopped Onions - 1 big
Chopped Tomatoes - 1 big
Chopped Potatoes - 1 big
Chopped Beans - a few
Coriander & Mint leaves - a few
Cloves, Cinnamon, Cardamom - little
Cumin - little
Ginger, Garlic chopped - 1tsp
Green chilies chopped - 10 no's
Coriander powder - 1/2 tsp
Turmeric Powder - 1/2 tsp
Garam Masala - 1/2 tsp
Lemon juice - 1/2 lemon
Coconut Oil - 3 tbs

Method of Preparation :

Heat the container,add 2 tsp of ghee, now fry the cloves, cinnamon, cardamom, sauté it, then add chopped ginger & garlic, sliced onion, sauté well,then add green chilly, sauté it. Now add the coriander, turmeric powder mix well, then goes the tomatoes next the potatoes, carrots, beans, little bit of coriander & mint leaves, now add the drain rice to it, sauté for 2 min. Add 1/4 tsp of turmeric also. Now add oil that needs and can add the required qty of water, slat and lemon juice also.

When boiled, lower the flame and cook until the water gets dry. Cook for about 10 min. Remove from fire and garnish with fried coriander, mint leaves, cashews and raisons.

  • Measure the rice in a bowl, before washing.

  • Wash the rice , drain and keep it apart for 10 min before cooking.

  • Required qty of water is: For one bowl rice, need 2 bowls of water.
