Boil ½ cup water with sugar in a sauce pan over medium heat. Stir untile the sugar dissolves.
Add pineapple essence and food coloring. Mix well to make a thick sugar syrup.
Pour the colored syrup onto a rolling board to form a circle. Immediately place in the lollipop sticks at the centre.
Allow them to cool completely. Then carefully peel the hardened lollipops off the rolling board using a knife.
Store Lollipops individually wrapped or serve immediately!
