Mathanga Erissery

Ingredients:

  • Pumpkin (Mathanga) - 500gm
  • Green Chillies - 5
  • Small Onion (Sliced) - 10
  • Grated Coconut  - 1cup
  • Curry leaves - one sprig
  • Cumin Seeds - 1tsp
  • Red Oriental Bean- 100gm 
  • Mustard - one pinch
  • Turmeric - 1/2tsp
  • Salt and oil required

Method of Preparation:

Cook the red oriental bean with salt and keep it aside. Remove the skin of pumpkin and cut it into small cubes. Cook it in a little water and mash it. Grind grated Coconut, sliced onions, green chilly, cumin seeds and turmeric powder. Add this mixture with with mashed pumpkin, red oriental bean and add required salt. Boil it till the gravy becomes thick. Heat oil in a pan, season mustard seeds and curry leaves and pour it on to the cooked pumpkin curry.
