Nankhatai(shortbread biscuits)

Nankhatai are short bread biscuits popular in North India.

These cookies are not so sweet, and are perfect to serve along with tea.

Ingredients:
Maida - 5 1/2 cup
Salt - A pinch
Crushed seeds of green cardamom - 1 tsp
Bicarbonate of soda - 2 tsp
Castor sugar - 2 1/2 cups
Ghee or butter - 50 g
Curd - 6-8 tbsp
Beaten till smooth
Cashew nut halves for decoration

Method of preparation:

Set oven to 175 C (350 F)

Sift flour with salt, crushed cardamom and bicarbonate soda.

Beat ghee or butter with sugar till light and fluffy. Add curd and mix well. Add flour and mix to a stiff dough. Rest dough for half an hour.

Place one-teaspoon on mixture on a greased baking tray of each biscuit, leaving a space of 2 inches between each. Place a cashew nut on top of each biscuit.

Place in oven and bake for about 20-25 minutes.
