Yakhni (Kashmiri Mutton Curry)

Ingredients :

 

 

Mutton

-

1kg

Dry ginger powder

-

1tbs

Aniseed powder

-

1tbs

Cinnamon (2"piece)

-

2nos

Curd

-

250ml

Khoya, ground to a powder

-

100gm

Sugar

-

1tbs

Milk

-

250ml

Cumin seed powder

- 1tsp

Slightly crushed green cardamom

- 12nos

Salt

- to taste
Ghee - 100gm

Method of Preparation :

Wash and cut mutton in small pieces. Cook the mutton along with ginger powder, aniseed powder, cinnamon and enough water till done. 

Mix curd, khoya, sugar, cumin seed powder, cardamom and salt. Add this to the meat and mix well. Lower the heat and add cooled milk, stirring continuously. Simmer for 15 minutes. Finally add ghee. Retain on a low heat for 10 minutes. Check seasoning and remove from fire. Serve hot with rice.
