Cooking Method :

Lets start by preparing the marinade. In a bowl, add 2-3 tsp of Kashmiri red chilly powder, half tsp of turmeric powder, ¼ tsp of cumin seeds, 1/2 tsp of salt, and egg white from two eggs. Beat all the ingredients until we get a thick egg white marinade. Now add the partially cooked cauliflower florets into the bowl, mix well with the marinade. Make sure that the florets are coated well with the mixture and marinate it for half an hour.

Heat oil in a kadai or pan. Once the oil turns piping hot, drop in the marinated cauliflower florets and deep-fry until it turns crispy. Once cauliflower is almost done add in some curry leaves, as the curry leaves gives out a very special flavor to our Crispy cauliflower fries. Using a slotted spoon take out the Crispy cauliflower fries. Serve hot.

Crispy cauliflower fries goes well with tomato sauce. It can be had as a side dish with curd rice or ghee rice as well.
