Mushroom Vindaloo

Ingredients :

Mushrooms chopped - 1cup
Potatoes cubed - 1-2 no
Oil (coconut oil) - 1/2 cup
Cardamom - a few
Cloves - few
Pepper - 2 tsp
Onion - 1
Green chillies chopped - 3 no
Water - as required
Vinegar - 2 tsp
Salt - to taste
Coriander leaves -  
For Grinding    
Jeera (cumin) - 1tsp
Red chilli - 4-5 no.
Ginger - 1 inch piece
Garlic - 5-6
Coriander seeds - 3 tsp
Cinnamon - 1 tsp
Turmeric powder - a pinch

Cooking Method :

Slightly grind Jeera (cumin), Red chilli , Ginger , Garlic, Cloves, Coriander seeds, Cinnamon and turmeric powder.

Peel, wash and chop potatoes into cubes. Fry the potato cubes in oil and keep aside. In the same pan, add some more oil if required. Sizzle cardamom , cloves and peppercorns. Add onions and sauté till they become translucent. Now add the coarsely ground masala paste. Fry the paste for some 12-15 minutes on a low flame. Add green chillies and chopped mushrooms and mix well with the masala paste. Continue to sauté for 8-10 minutes. Add water according to the desired gravy you need. Add vinegar & salt to taste and let it cook for 10-12 minutes more. Finally add the fried potatoes and simmer for a few more minutes. Garnish with Coriander leaves. Transfer Mushroom Vindaloo to a dish and serve hot.
