Traditional Muslim dish, Tharikkanji, a common Ramadan dish all over Kerala. This tasty and energetic drink, made with semolina is sweet with a hint of salt. Usually it is taken without any accompaniments, while breaking the fast.

     

Ingredients :

   
Milk - 2 cups
Water - 1 cup
Semolina - 2 cups
Sugar - 1cup
Salt - a pinch
Ghee - ½ cup
Chopped onion - 2 or 3
Cashew nuts and raisins - to garnish
Cinnamon powder - 2 pinches
Cardamom powder - 2 pinches

Cooking Method :

Mix water and milk in a pan and boil it. Slowly add semolina to it. Keep stirring to avoid formation of chunks. Add sugar. Add one or two pinches of salt to it. Once the mixture boils well, take it out of the stove.

Now heat 2 -3 tbsp ghee in a pan. Add chopped onions to it and fry well. Once it turns golden brown, add fried onion to the semolina mixture.

Similarly fry cashew nuts and raisins in the same ghee. Add it to the mixture and blend well.

Again boil the semolina mixture by pouring a little milk to it. Keep stirring until oil separates. Now pour ghee to the mixture. Finally add cinnamon and cardamom powder. Mix well and serve hot.
