Pineapple Kheer

Ingredients :
Ripe Pineapple Diced - 1 bowl 
Water - as required
Ghee  - 3 tbsp
Sugar - 1 tsp
Yellow Food Color - a pinch
Condensed Milk - 2 tbsp
Thick Coconut Milk & Thin coconut Milk - 1 cup each
Cardamom Powder - 1 tsp
Dry Ginger Powder - 1 tsp
For garnishing :    
Cashew Nuts - a few
Raisins - a few

Method of Preparation :

First we have to boil the pineapple in water. Take take some water in a pan, put  the pineapple pieces into it and let it boil for sometime.

Meanwhile in another pan add some ghee and fry cashew nuts and raisins, which are needed for garnishing. When it is done, keep it aside.

Now we’ll check whether our pineapple is done. Off the stove when the pineapple pieces have turned soft and tender, and wait for sometime till it gets cooled. Now transfer the boiled pineapple pieces into a food processor and grind well till it turns into a smooth paste.

Pour the pineapple pulp into a pan and boil, add some ghee followed by sugar and a pinch of yellow food color. Add the thin coconut milk and stir well. Keep on stirring. Remember to lower the flame as there is a chance for the brew to get curdled.

Now add condensed milk and then the thick coconut milk, followed by cardamom powder and ginger powder for an incredible flavour. Now turn off the stove and serve the kheer into a bowl.

Garnish with cashewnuts and raisins. Serve chilled!
