Sorpotel

 Ingredients : 

  • Pork - 1kg 
  • Pork liver and heart - 1/2kg
  • Vinegar - 1/2bottle (300ml)
  • Small ball of tamarind, soaked in a cup of water
  • Finely chopped garlic - 1 pod
  • Finely chopped ginger - 2"piece
  • Finely chopped onions - 3nos
  • Finely chopped green chillies - 4nos
  • Salt - to taste

For Masala : 

  • Dry red chillies - 20nos
  • Cumin seeds - 1tsp
  • Cloves - 6nos
  • Turmeric powder - 1tsp
  • Peppercorns - 10nos
  • Cinnamon - 1" piece

Method of Preparation : 

Grind the ingredients for masala with a little vinegar and keep aside.

Wash and boil the uncut pork, liver and heart. Cool and cube into small cubes. Fry the cubes in a pan without using any oil till brown, remove and set aside. 

Using a little fat from the fried pork, fry ginger, garlic and onions, until the onions change colour. Add ground masala and fry for a minute. Add fried pieces of meat along with the tamarind paste and little vinegar (if necessary). Add 2tsp of salt. 

Cook on a slow fire for 1- 11/2hours until meat is tender. Finally add chopped green chillies and cook for another ten minutes. Remove from fire. 

Sorpotel can be served with sannas, a type of rice bread and it tastes good on the next day. It is even better after three days or more.
