Chicken Baffed
Serves 6
Ingredients :
- Chicken - 1large
- Grated Coconut - 1large
- Finely chopped Onions - 2nos
- Chopped Green chillies - 4nos
- Chopped Ginger - 1"piece
- Chopped Garlic - 12flakes
- Groundnut oil - 1/2cup
- Vinegar - 11/2tbs
- Salt - to taste
To Grind :
- Kashmiri chillies - 8nos
- Turmeric - 1small piece
- Peppercorns - 20nos
- Cumin seeds - 1/2tsp
- Cloves - 5nos
- Cinnamon - 1"piece
Method of Preparation :
Slice chicken into medium pieces. Grind the
coconut. Add 1 cup water and then squeeze out the thick milk, keep it aside as
first extract. Add 1 more cup of water and squeeze out the second extraction.
Keep aside.
Heat oil and sauté onions till
half done. Add chicken pieces, salt, chopped chillies, ginger and garlic. Sauté
well by stirring
often.
Add the ground spices and fry till
the oil separates. Add both the extracts of coconut milk. The milk should just
cover the chicken. Cover and cook over a medium heat, stirring occasionally,
till the chicken is nearly done. Add vinegar and cook till the chicken is done.
