Pineapple Jam
Method 1
Ingredients :
- Pineapple pieces - 6cups
- Sugar
- 6cups
- Citric
Acid
- 1tsp
- Lemon Yellow Colour - 2 drops
- Pineapple essence - 2drops
Method of Preparation :
Cook the pineapple pieces with water in a low flame.
Stir it continuously with a wooden ladle. While it boils slowly add sugar into it. Boil it well by stirring continuously. To test whether the jam is
done, pour some jam on a dry plate. Allow it to cool and tilt the plate. If the
jam is ready, it will fall in flakes. When the jam is
done, add citric
acid, lemon yellow colour and pineapple essence to it. Remove from fire
and pour into a bottle. When the jam cools, close the mouth of the bottle.
Method 2
Ingredients :
- Ripe pineapple - 1 kg
- Clove
- 24 no's
- Cinnamon 1inch piece - 12 no's
- Sugar
- 11/2kg or

- 11/2tsp
- Yellow
colour - 2 pinches
- Potassium meta bisulphate - 2 pinches

Method of Preparation :
Remove the skin of the pineapple and grind the flesh.
Crush clove and cinnamon into 2 or 3 pieces and add to the pineapple.
Place this in a vessel and boil with sufficient water. When it boils,
remove the clove and cinnamon pieces from it. After that, remove the pineapple
from the fire and add sugar and citric acid to it. Place it again in fire
and stir continuously. When it becomes a thick solution, remove from fire
and add the colour dissolved in 1dsp of water. Allow it to cool. When
the jam becomes cool, dissolve potassium meta bisulphate in half of its
quantity. Mix it with the other half and keep in a bottle.

- 500gm
- Lime juice - 1tbs
- Clove

Method of Preparation :
Remove the skin of the pineapple and cut it into
small pieces. Use only the soft flesh. Cook the pineapple with
2cups of water and the clove. When it is done, remove the cloves from it and
grind the pineapple pieces. Boil it again with the sugar and lime juice. Stir it
well. When the content becomes thick, remove from fire and pour it to a clean
bottle.
