Avial

Ingredients:    
Colocasia, Potatoes, snake-gourd, brinjal, Lady's finger, raw banana, drumstick pieces - all together 6 cups
Sliced Onions - 1 cup
Grated Coconut  - 3 cups
Curd - 1 cup
Coconut oil - 2 tbs
Curry leaves - 3 sprigs
Salt to taste - To taste
Green Chillies - 10
Red Chillies - 8
Turmeric - 1 piece
Cummin seed - 1/2 tsp

Method:

Cut all the vegetables into pieces of the same size. Take two cups coconut milk from the grated coconut by mixing it with 11/2 cups of water. Wash the vegetables pieces and put them in a pot, with onions and coconut milk. Put on fire and allow it to boil well. Grind turmeric and red chillies and mix with salt water. Slit the green chillies and put it with the vegetable pieces together with the ground masala mixed in salt water. Stir well and cook, with the pot covered till they are done. Grind coarsely, one cup grated coconut and cumin seed and mix it with one cup curds which is not very sour and add to the vegetables. Let it boil. Stir and remove from fire. Crush the curry leaves and put in coconut oil and add to the avial.
