Sardine Cutlets

| Sardines | - | 20 |
| Minced onions | - | 1/2 cup |
| Minced tomato | - | 1/4 cup |
| Minced ginger | - | 11/2 tsp |
| Powdered pepper | - | 1/2 tsp |
| Lime juice | - | 1/2 tsp |
| green chillies | - | 4 |
| Slices of bread | | | | Egg | - | 2 |
| Bread crumb | - | 1 | | Oil for frying | | |
| Method:
Clean the fish removing the head. Slit the back side, insert a finger and pressing
the finger to the bone, move backwards and forwards and you get the flesh out.
Do the other side also like wise. With the help of a knife remove the hair like
bones and mince the flesh. In 11/2
dsp oil saute the onion, minced green chillies and the ginger. Add the tomato
stir for sometime and then mix the minced sardine. When it is dry add the lime
juice, salt and the pepper. Squeeze out the water, after dipping the bread in
water. Mash it along with the sardines and the yolk of the egg. Make small balls
the size of a lime and flatten them. Sprinkle some flour over them- Dip each in
beaten egg white, coat with bread crumbs and fry to a golden brown colour.
