Pineapple Jam Cake
Ingredients :

Refined flour - 1/4kg
Baking powder - 1tsp |

Grated ripe pineapple - 1/2cup

Method :
Cook the 5th ingredients together well. After it
cools, smash and squeeze 1/4cup thick juice from it.
strain and keep aside.
Sieve flour and baking powder together. Soften
butter and beat well with the powdered sugar. Add the egg yolk one by one into it
while beating.
Mix it with the sieved flour, pineapple juice and the pineapple jam.
Beat the egg white and the essence till light and
fluffy. Add
this to the cake batter. Pour the contents into a greased and floured vessel and bake for 10
minutes at 4000C and for 35 minutes at 3500C.
Ingredients for butter icing :
- Butter
- 2dsp
- Powdered sugar - 2dsp
- Pineapple jam - 2dsp
Beat butter and powdered sugar well. Add
pineapple jam in it and mix well. Cut the cake into 2 half's and spread the icing
over the cake.
