Chocolate Cake

Method 1
Ingredients : (Serves 8 people)

  • Eggs             - 3nos
  • Butter            - 200g
  • Vanilla essence - 3/4tsp
  • Castor sugar  - 200g
  • Milk or Orange juice - 1tbs
  • Cocoa powder - 30g
  • Flour                - 200g
  • Baking powder - 1/2tsp or 2g

Method of Preparation:

Beat the eggs till light and fluffy. Soften the butter (microwave at 100 percent powder for 10 to 20 seconds) and add to the eggs. Add vanilla essence and sugar and beat till well blended.

Sieve cocoa, flour and baking powder together and gradually fold into the egg-butter mixture, making quick figures of eight in the base of the bowl. Add milk or orange juice.

Line the base of the microwave safe dish with greased and floured greaseproof or brown paper and pour in the batter. Microwave at 100 percent powder for five minutes. Stand for five minutes. (Test with a skewer). When cool, gently turn the cake out. Store in an airtight box.

Top the cake with nuts. A dusting of castor sugar will make it look very attractive.

Method 2
Ingredients : 

  • Sugar     - 1/2cup
  • Cocoa powder - 1/2cup
  • Water     - 1/2cup
  • Egg       - 3nos
  • Soda powder - 1tsp
  • Baking powder - 1/2tsp
  • Refined flour - 2cup
  • Powdered sugar -11/2cup
  • Butter      - 3/4cup
  • Curd       - 3/4cup
  • Vanilla essence - 1tsp

Method of Preparation :

Mix sugar, cocoa powder and water. Boil the mixture and make it  thick. Stir continuously. Remove from fire and allow to cool.

Beat the yolk of an egg and vanilla essence. Mix butter and powdered sugar. Add the beaten egg and the remaining eggs to it and soften the batter by stirring. Add the prepared cocoa mixture to this.

Mix baking powder and refined flour. Add soda powder to the curd. 

Mix the flour and the curd to the early prepared mixture. Stir it well. Pour it to a greased vessel and bake for 45 minutes.

Method 3
Ingredients : 
1. Refined flour   - 21/4cup
Soda powder - 11/2tsp
Salt                - 1/4tsp
2. Milk                - 3/4cup
Cocoa powder - 1/2cup
3. Dalda (vanaspathi or ghee) - 1/2cup
Butter              - 1/2cup
Powdered sugar - 2cup
4. Egg                - 3nos
5. Curd               - 1/4cup
Vanilla essence  - 1/2tsp

Ingredients for icing :

  • Icing sugar  - 1cup
  • Cocoa powder  - 1/4cup
  • Salt             -  pinch
  • Water          - 1cup
  • Sugar          - 1/4cup
  • Butter          - 1/2cup
  • Vanilla essence - 1/2tsp
  • Refined groundnut oil - 1dsp

Method of Preparation : 

Sift the 1st ingredients together. 

In a vessel dissolve cocoa powder with milk and mix it with the 3rd ingredients. 

Heat some water in a big  vessel. When it boils, place the vessel with the cocoa mixture  in it. Heat the contents by stirring continuously and when it warms up, remove from fire. Leave it to cool.

Add the 1st ingredients and the beaten eggs. Then add curd and essence and mix well. Pour the batter into a greased and floured round dish. Bake in a preheated oven at 350oF for about 3/4 hour. 

Icing :

Sieve icing sugar, cocoa and salt together. Heat water and sugar, until the sugar dissolves and then remove from heat. Add the sieved contents into the warm sugar solution. Also add the essence, butter and oil to it and mix well. Pour this over the cake uniformly.
