Nutty Dates and Carrot Cake

Ingredients:    

Thinly chopped dates

- 2 cups

Grated carrot

- 11/2 cup

Grated orange skin

- 50 gm

Raisins

- 50 gm

Egg

- 3 nos

Sugar

- 1 1/2 cup

Refined oil

- 11/2 cup

Refined flour

- 2 cup

Baking powder

- 1 tsp

Salt

- a pinch

Ground nutmeg, cardamom & clove

- 1 tsp

Cashew nuts

- 150 gm

Ghee

- 1 tbs

Brandy

- 1 tbs

Orange juice

- 1/4 cup
Vanilla essence - 1/2 tsp



Method :
 

Mix brandy and orange juice. Soak the chopped dates, carrot, raisins and the grated orange skin in the brandy-orange juice solution and keep it for 1/2 an hour. 

Sauté the cashew nuts in ghee until light brown colour and keep it aside. Beat the refined oil, sugar and egg together until fluffy. Mix the sauted cashew nuts and all the other ingredients in it. Mix it well for 5 minutes. 

Mix the refined flour, baking powder and a pinch of salt. Add this to the mixture. Also add the fruit solution. Mix them all together. Bake the cake for about 35 to 40 minutes. 

Ingredients for Frosting : 

Sugar  - 1/2 cup
Water - 1cup
Icing sugar - 300gm
Butter - 3tbs
Milk powder - 1cup
Lime juice - 1/2 tsp

Method :

Melt the sugar in water by keeping it in fire. When it become a thick syrup, remove it from from and add the icing sugar. After that add butter to it and stir well. Add lime juice and milk powder to the sugar syrup and pour it above the cake.
