Citrus Milk Cake

Ingredients:    
1 Refined flour - 2 1/4 cups
  Baking powder - 3/4 tsp
  Soda bicarbonate - 1/4 tsp
2 Butter   - 1 1/2 cup
3 Powdered sugar - 2 cups
4 Egg yolk - 3 nos
5 Grated lemon skin - 1/2 tsp
  Lime juice - 2 dsp
6 Warm milk - 1/2 cup
7 Egg white - 4 nos
  Vanilla essence - 1/2 tsp



Method :

Sift the first ingredients together. Sieve the powdered sugar separately.

Soften the butter and fold in powdered sugar. Add the egg yolk and mix well. Alternately add the grated lemon skin, lime juice, sifted flour and the milk slowly and mix well with a ladle.

Beat the egg white and vanilla essence together. Add this to the cake mixture. Pour the contents into a greased vessel. Bake in a preheated oven at 400oF for 10 minutes. Then bake at 350oF, for 35 minutes.

Cut the cake into 2 halves when it cools. Mix 2dsp powdered sugar, 1dsp butter and 1dsp cocoa powder. Spread this evenly on the sliced edge of the cake and rejoin the the two halves.

Ingredients for Icing :

Sugar 

- 1/2 cup

Water

- 1 cup

Icing sugar

- 300 gm
Butter - 3 dsp

Milk powder

- 1 cup

Vanilla essence

- 1/2 tsp
Baking powder - 2 pinch

Dissolve sugar in water on a low flame. Add the icing sugar and stir well. Remove from fire when the solution becomes sticky. Add butter and beat well. Add the baking powder and beat again. Pour the warm icing over the cake evenly. You can also decorate the cake with chocolate icing.
